Lasagna Soup

🥣 Lasagna Soup (with Cottage Cheese)
Serves: 6
Ingredients
1 lb ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
1 (24 oz) jar marinara sauce
4 cups chicken or beef broth
1 cup water
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp dried basil
1 tsp dried oregano
Pinch red pepper flakes (optional)
8 lasagna noodles, broken into pieces
Cheese Topping
1½ cups full-fat cottage cheese
1½ cups shredded mozzarella
¼ cup grated parmesan
Instructions
Brown the meat
In a large pot over medium heat, cook meat until browned. Drain excess grease.
Add aromatics
Add onion and garlic. Cook 2–3 minutes until soft.
Build the soup
Stir in marinara, broth, water, and seasonings. Bring to a gentle boil.
Cook pasta
Add broken lasagna noodles. Simmer 8–10 minutes, stirring occasionally.
Serve
Ladle soup into bowls and top each with a generous scoop of cottage cheese, mozzarella, and parmesan. Stir gently or let the cheese melt on top.
Optional Upgrades
Blend cottage cheese briefly for a smoother, ricotta-like texture
Add spinach or zucchini in the last 2 minutes
Finish with fresh basil or parsley
