Apple Puff Pancake

Equipment

Ingredients
  

  • 5 Eggs
  • 1/2 cup Flour
  • 3/4 cup Milk
  • 4 tbsp Brown sugar
  • 3 tbsp Butter
  • 2 tsp Cinnamon
  • 2 tsp Vanilla Extract
  • 2 Apples Peeled and sliced thin
  • 1/2 tsp Salt

Instructions
 

  • Preheat the Oven – Set it to 425°F.
    Sauté the Apples – In a pan, melt butter over medium heat. Add apple slices, brown sugar, and cinnamon. Cook for 3-5 minutes until apples soften slightly.
    Make the Batter – In a blender or bowl, whisk together milk, flour, vanilla, and salt until smooth. Then add the eggs and mix together till smooth. If the batter is lumpy use an immersion blender.
    Combine and Bake – Remove the skillet from the burner. Pour in the batter, over the apples
    Bake to Perfection – Bake for 15-20 minutes or until the pancake puffs up and turns golden brown.
    Garnish and Serve – Dust with powdered sugar. Serve warm with maple syrup or a dollop of whipped cream.

Notes

  • Serve Immediately – The puff will deflate slightly after coming out of the oven, but it remains delicious!
