Hershey’s Candy Bar Cookies 

Mini candy bar cookies!! This is one of my favorite cookies to eat. I found a recipe in a magazine years ago and could not stop eating them.  Then I eventually lost the recipe and forgot about these cookies until a few weeks ago. I couldn’t find the recipe online, so I made my own.

Things you need:

 Sheet Pan

Silicone Mat

Mixing Bowl

Hand or Stand Mixer

Cookie Scoop

Tips:

Let the cookies cool on the baking sheet, they will be soft coming out of the oven and need time to firm up.

These cookies will last 5 days in an airtight container at room temperature.

You can scoop the dough out and place it on a cookies sheet and freeze it. Once firm to the touch transfer frozen dough balls to a freezer safe plastic bag.  Place in the freezer for up to three months.

Ingredients:

1 cup all-purpose flour

1 cup quick oats

1/2 cup butter

1/2 cup light brown sugar

1/4 cup granulated sugar

1 egg

1/2 teaspoon salt

1/4 teaspoon baking soda

1 teaspoon vanilla

2 Hersheys candy bars (separated into rectangles)

 

 

Directions

 

  • Preheat oven to 350 degrees

     

    Combine the flour, oats, salt and baking soda in a bowl then whisk together and set aside. Using a stand or hand mixer beat the butter and sugars together until creamy, about 2 minutes. Add in egg and vanilla until combined. Scrape the bowl down and mix once more. Gradually add flour mixture to butter mixture, beating on low speed until just combined.

     

    Using a small cookie scoop or tablespoon and scoop out dough onto a cookie sheet covered in parchment paper or a silicone mat. Place each scoop about 2 inches apart to keep the cookies from running together as they bake.

     

    Place in 350-degree preheated oven and bake for 7 minutes. Remove the baking sheet from the oven onto a cooling rack. Place 1 rectangle of the Hershey’s candy bar on each cookie and slightly press down so it will melt to the cookie.
