Soft oatmeal cookies with Hershey's candy bar

A soft oatmeal cookie each topped with a piece of Hershey's candy bar

Equipment

  • 1 baking sheet
  • 1 Mixer

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 cup butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 Hershey's candy bars

Instructions
 

  • Preheat oven to 350 degrees
    Combine the flour, oats, salt and baking soda in a bowl then whisk together and set aside. Using a stand or hand mixer beat the butter and sugars together until creamy, about 2 minutes. Add in egg and vanilla until combined. Scrape the bowl down and mix once more. Gradually add flour mixture to butter mixture, beating on low speed until just combined.
    Using a small cookie scoop or tablespoon and scoop out dough onto a cookie sheet covered in parchment paper or a silicone mat. Place each scoop about 2 inches apart to keep the cookies from running together as they bake.
    Place in 350-degree preheated oven and bake for 7 minutes. Remove the baking sheet from the oven onto a cooling rack. Place 1 rectangle of the Hershey's candy bar on each cookie and slightly press down so it will melt to the cookie.
