Smoked Brisket Pizza

Equipment
- 1 Pizza stone or Cast Iron skillet.
- 1 Smoker
Ingredients
- 1 cup Shredded Mozzarella Cheese
- 1/2 cup Shredded Parmesan Cheese
- 1 tbsp Olive oil
- 3 Mushrooms Thinly sliced.
- 2 Green onions Sliced.
- 1/2 cup Sweet peppers Thinly sliced.
- 1/2 cup BBQ sauce
- 1 cup Brisket Cooked, sliced or chopped.
- 1/4 cup Red onion Thinly sliced.
- 2 tbsp Cilantro Chopped.
Instructions
- Preheat smoker to 370 degrees.
- Generously oil cast iron skillet.
- Place pizza dough in skillet and press down and out to stretch dough to shape of the skillet.
- Spoon on BBQ sauce and slather on dough to edges.
- Add 1/2 cup of mozzarella cheese.
- Add brisket and vegetable, except cilantro.
- Top with remaining mozzarella and parmesan cheese.
- Place in the smoker and smoke for about 20 minutes or until cheese is melted.
- Remove pizza from smoker and sprinkle on cilantro.
Smoked Brisket Pizza
Smoked brisket pizza is a great way to use leftover brisket. Try smoking your pizza on a pellet grill. It adds a smoky taste.
Ingredients:
- Pizza dough – I prefer homemade pizza dough for the crust, but you can use storebought.
- BBQ sauce – 1/2 cup. You can use half BBQ and half Marinari pizza sauce or all BBQ sauce.
- Mozzarella cheese – 1 cup. I use fresh shredded cheese.
- Red onion – Half of a small red onion thinly sliced. This recipe calls for fresh red onion, but caramelized onions would also work well.
- Brisket – 1 cup. Thinly sliced cooked strips or cubed.
- Peppers – 1/4 cup. I used mini sweet peppers, green, red or orange bell peppers will work also.
- Olive oil – 1/2 Tablespoon
- Parmigiano cheese – 1/2 cup. Shredded.
- Cilantro – 2 Tablespoons. Added after pizza is smoked.
- Green onion – 2 onions sliced.
- Mushroom – 3 mushrooms thinly sliced.
Directions:
- Preheat smoker to 375 degrees.
- Oil cast iron skillet.
- Place dough in skillet and press and shape to size of pan.
- Spread around BBQ sauce to edges.
- Sprinkle on 1/2 cup of mozzarella cheese.
- Add brisket, red onion, sweet peppers, green onions, and mushrooms.
- Top with remaining mozzarella and Parmesan cheese.
- Place in smoker for 20 minutes or until cheese is melted.
- Remove from smoker and sprinkle on cilantro.
